This cookbook is dreamy. I saw someone on TikTok rave about his recipe and had to give it a try. If it's on the blog it's a keeper.
Cookies
1 cup brown sugar
1/2 cup salted butter, softened
1/2 cup vegetable oil
1 egg
1 t. vanilla
2 1/2 cups flour
2 t. cinnamon
1 t. kosher salt
1/2 t. baking powder
1/2 t. baking soda
Streusel
1/2 cup flour
1/4 cup salted butter, softened
1/4 cup brown sugar
1/2 t. cinnamon
1/4 t. kosher salt
Icing
1/2 cup powdered sugar
1 T. milk
1/4 t. vanilla
Preheat oven to 350.
Mix brown sugar, butter and oil until creamy. Add egg and vanilla and combine. Add flour, cinnamon, salt, baking powder and baking soda and mix until combined.
Make streusel. Mix flour, butter, brown sugar, cinnamon and salt together. Using your fingers mix for a minute until a dough forms. The mixture should stick together when squeezed into a ball but crumble when you run your fingers through it.
Use a large cookie scoop and form dough into balls. Place six on each baking sheet. Use the back of the cookie scoop to indent the top of each one abut 1/2 an inch deep.
Crumble about 2 T. of streusel into the indent.
Bake for 12 minutes until edges are just starting to set.
Make icing by whisking sugar, milk and vanilla together until smooth. Drizzle on top of each cookie.
